Mennonite Cream Cookies: A Delicious Taste of Tradition
If you are looking for a unique and delicious cookie recipe, look no further than Mennonite cream cookies. These soft and fluffy treats have a rich buttery flavour and a delicate texture that makes them a favourite among cookie lovers.
The origins of Mennonite cream cookies can be traced back to the Mennonite community, a group of Christian Anabaptists who have a long history of baking and cooking delicious food. This family recipe, created by Betty (Fehr) Seib, was shared with me and I am honoured to be able to share it with you. These ccookies were traditionallty made with cream, butter, sugar and flour and were often served at special occations. I love making these cookies for any occation, whether it be a special holiday or for tea time for myself.
To make Mennonite cream cookies you will need the following ingredients:
- 0.5 cups unsalted butter, at room temperature
- 1.25 cups granulated sugar
- 1 egg
- 1 cup whipping cream
- 0.75 cups milk
- 1 tsp vanilla extract
- 2.5 Tbs baking powder
- 0.5 tsp salt (if using salted butter, omit)
- 3-4 cups all purpose flour
Instructions:
- Begin by creaming the butter and sugar together in a large mixing bowl or stand mixer with the paddle attachment until light and fluffy.
- Add the egg and fully incorporate, scraping down the sides of the mixing bowl.
- Next add in the cream, milk and vanilla extract and mix well. This will look a little soupy.
- In a separate bowl wisk together 3 cups of flour with the baking powder and salt, and slowly add to the wet ingredients.
- Add the remaining flour until the dough is soft and rollable, it should not be crumbly. The trick is to leave the dough as soft as possible while still holding it's shape.
- Wrap the dough in siran and refridgerate for at least one hour before rolling out on a lightly floured surface.
- For a fluffier cookie roll the dough to 1/2". For a crispier cookie, role to 1/4".
- Bake in a preheated 350°F oven for 10-12 minutes until the bottoms are lightly golden brown.
- Allow them to cool on the baking sheet for a couple minutes before transferring to a wire rack to cool completely.
Glaze with a simple cream icing or enjoy them with jam or lemon curd. These Mennonite cream cookies are sure to be a hit with your friends and family. They are perfect for special occations, or simly as a treat to enjoy with a cup of tea or coffee.
